    <p>Цель исследования – оценка влияния разнотипных террураров на физиологические параметры листьев, качественные показатели ягод и вина из отечественных сортов винограда Дмитрий, Владимир и Курчанский. Исследование выполнено в трех разнотипных терруарах различных агроэкологических зон виноградарства: Центральная зона (ЦЗ), Предгорная (ПЗ), Черноморская (ЧЗ). Объект исследований – технические сорта винограда селекции ФГБНУ СКФНЦСВВ – Дмитрий, Владимир и Курчанский. Содержание воды (WC) в листьях винограда во все сроки наблюдений было наибольшим в Центральной зоне – 72,6 % за месяц до сбора урожая, 71,3 % – в период сбора урожая, наименьшим в Предгоргой зоне – 67,7 % в первый срок, 63,3 % – во второй срок. Реакция сортов на различную среду обитания терруаров имеет сортовые особенности. У сортов Курчанский и Дмитрий в динамике в Центральной зоне отмечалось увеличение пока-зателя WC на 3,4 и 1,7 % соответственно. В Предгорной и Черноморской зонах у всех сортов отмечено снижение содержания воды в листьях на 0,8–9,3 %. Массовая концентрация сахаров и титруемая кислотность варьировали в зависимости от условий терруара и сортовых особен-ностей. Наибольшей способностью к сахаронакоплению отличается сорт Дмитрий в Предгор-ной зоне (22,6 г/100 см3), сорт Курчанский в Черноморской (23,2 г/100 см3). Минимальное содер-жание сахаров (19,4 г/100 см3) отмечено у сорта Курчанский в Центральной зоне. Наименьшее содержание титруемых кислот характерно для Центральной зоны. Наибольшим различием по содержанию фенольных веществ характеризовался сорт Дмитрий. Их содержание наибольшим было в образцах вина из винограда Предгорной зоны, меньшим – Центральной зоны. Образцы вина из Предгорной и Черноморской зон обладают более высоким качеством.</p>

    <p>The aim of the study is to evaluate the influence of different terroirs on the physiological parameters of leaves, and the quality indicators of berries and wine from the domestic grape varieties Dmitriy, Vladimir and Kurchanskiy. The study was conducted in three different terroirs of various agro-ecological viticultural zones: the Central'naya Zone (CZ), Predgornaya (PZ), and Chernomorskaya (ChZ). The object of the study was technical grape varieties bred by the Federal State Budgetary Scientific Institution SKFNCSVV – Dmitriy, Vladimir and Kurchanskiy. The water content (WC) in grape leaves at all observation periods was highest in the Central'naya Zone – 72.6 % one month before harvest, 71.3 % during harvest, and lowest in the Predgornaya zone – 67.7 % during the first period, 63.3 % during the second period. The response of varieties to different terroir environments has varietal characteristics. The Kurchanskiy and Dmitriy varieties showed a 3.4 and 1.7 % increase in WC, respectively, in the Central'naya Zone. In the Predgornaya and Chernomorskaya zones, all varieties showed a decrease in leaf water content of 0.8–9.3 %. The mass concentration of sugars and titratable acidity varied depending on terroir conditions and varietal characte¬ristics.The Dmitriy variety in the Predgornaya zone had the highest sugar accumulation capacity (22.6 g/100 cm3), while the Kurchanskiy variety in the Chernomorskaya zone had 23.2 g/100 cm3. The Kurchanskiy variety in the Central zone had the lowest sugar content (19.4 g/100 cm3). The Central'naya zone had the lowest titratable acid content. The Dmitriy variety showed the greatest&#13;
variability in phenolic content. Phenolic content was highest in wine samples from the Predgornaya zone and lower in those from the Central'naya zone. Wine samples from the Predgornaya and Chernomorskaya zones were of higher quality.</p>
