The objective of the study is to conduct a veterinary and sanitary assessment of the quality of broiler chicken slaughter products associated with the presence of residual amounts of fluoroquinolone antibiotics in muscle tissue and offal. The study material consisted of slaughter products of Ross-308 broiler chickens from the control and experimental groups. Meat and slaughter product samples were collected in the enterprise's slaughterhouse. Residual antibiotic amounts were identified in muscle tissue and offal on the 5th (at the age of 8 days) and 34th (at the age of 42 days) days after the last administration of the drug. Post-mortem veterinary and sanitary examination of carcasses and internal organs, determination of organoleptic indicators, and bacteriological studies were carried out using standard generally accepted methods. Carcasses of young poultry comply with GOST 18292-2012, and are classified as first grade in terms of fatness. The weight of the gutted carcass of the experimental group was (1995.6 ± 15.8) g, the weight of the gutted carcass of the control group was (1739.8 ± 12.3) g. When using the antibiotic enrofloxacin at a dose of 1 l of 10 % solution per 1 ton with drinking water for 5 days, the weight of the gutted carcass of the experimental group increased by 14.72 %. The concentration of enrofloxacin in the samples on the 2nd day after the last use of the antibiotic was less than 10 μg/kg, which is below the maximum permissible (100 μg/kg). Enrofloxacin levels in the liver and kidneys are higher than in muscle. Enrofloxacin levels do not exceed the maximum permissible level, meaning all samples are fit for consumption. Thirty-four days after discontinuing treatment, no residual enrofloxacin was detected in various organs and tissues of broiler chickens. Organoleptic testing showed that enrofloxacin did not adversely affect meat flavor; organoleptic characteristics were met with standard requirements; and meat was of high quality according to veterinary and sanitary requirements.
